WHITE FRUIT CAKE 2 pkg. white raisins 2 qt. nuts, chopped 1 grated coconut (optional) 1/2 lb. red pineapple 1/2 lb. green pineapple 1/2 lb. white pineapple 1/2 lb. green cherries 1/2 lb. red cherries 3/4 lb. butter 8 medium eggs 2 1/2 c. sugar 4 c. self-rising flour 1 1/2 tsp. vanilla Cream butter and sugar until smooth. Add eggs, one at a time, and beat well. Add 3 cups flour, one cup at a time, and mix well after each addition. Add grated coconut and vanilla. Chop nuts, pineapple and cherries; add raisins. Mix all together in large pan and add remaining cup of flour. Mix well to coat fruit. Add batter and mix well. Will make 2 small cakes, if baked in tube pans or 1 large cake. Bake for 2 hours at 200 degrees.
