RED VELVET CAKE 2 1/2 c. plain flour 1 1/2 c. sugar 1 c. buttermilk 2 eggs 1 tsp. cocoa 1 tsp. soda 1 tsp. salt 1 tsp. vinegar 1 tsp. vanilla 1 1/2 c. Wesson oil 1 large bottle red food coloring Mix sugar and oil. Add eggs. Add cocoa, soda and salt to flour. Add to mixture alternately with buttermilk. Bake at 350 degrees. Makes 2 to 3 layers. Frost with Red Velvet Frosting. Red Velvet Frosting: 1 1/2 c. water 3 Tbsp. cornstarch 1 1/2 c. sugar 2 tsp. vanilla 3 sticks butter Cook cornstarch and water until thick. Cool well. Cream sugar, butter and vanilla together well. Add cornstarch mixture to this. Beat until consistency of whipping cream. Makes enough frosting for a 2 or 3 layer cake.
