LEMON FILLING

1 1/2 c. sugar
2 eggs
1/2 c. lemon juice
2 Tbsp. butter
4 Tbsp. cornstarch
1 1/2 c. water
grated rind of 2 lemons

Combine sugar and cornstarch. Add well-beaten eggs,
water and lemon juice to flour mixture. Cook in double boiler
until thick. Remove from heat and add lemon rind and butter.
Cool. Spread on layers, top and side. Enough for 3 layers.
