CANDY CANES

1/4 tsp. cream of tartar
1/2 c. light corn syrup
1/2 c. water
3/4 tsp. peppermint extract
1 tsp. red food coloring
2 c. sugar

Mix together cream of tartar, corn syrup, water and
sugar. Stir over heat until sugar dissolves. Cook to 265 degrees
(very hard boil stage). Remove from heat. Add peppermint.
Divide mixture in half. Add food coloring to one part. Pour
on greased platters. Pull each apart separately into ropes.
Twist red part around white. Cut into 8-inch lengths. Form
into candy canes.
