CHOCOLATE PECAN PUMPKIN CAKE|
2 1/2 c. sugar
1 c. salad oil
2 c. pumpkin
3 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped pecans
1 c. miniature chocolate chips
Combine sugar and oil; add eggs and beat until thorough-
ly incorporated. Stir in pumpkin. Sift together dry ingredi-
ents and add to sugar mixture. Add pecans and chocolate chips;
stir again to combine thoroughly. Pour the batter into an
ungreased 10-inch tube pan. Bake at 350 degrees for 1 hour or until a
knife inserted in the center comes out clean. Cool on rack.
