POTATO CHOCOLATE CARAMEL CAKE|
2/3 c. butter or shortening
2 c. sugar
1 c. hot mashed potatoes
2 sq. chocolate, melted
4 eggs, beaten
2 c. flour, sifted
1 tsp. vanilla
3 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. cloves
3/4 c. milk
1 c. chopped nuts
Cream butter or shortening. Add sugar gradually and
cream together thoroughly. Combine hot mashed potatoes, melted
chocolate and well beaten eggs. Add to the creamed mixture and
blend well. Sift flour with baking powder, cinnamon, nutmeg
and cloves. Add to the potato mixture alternately with the
milk. Stir well after each addition. Add flour-covered nuts
and vanilla. Pour into greased 3/8 inch layer pans. Bake at
325 degrees for 40 minutes or until an inserted toothpick can be
removed clean. Cool 5 minutes in pans then turn out on racks.
Frost when cool with a butter cream frosting. Makes a 3 layer
