PUMPKIN BARS 2 c. sugar 1 c. vegetable oil 4 beaten eggs 2 c. canned pumpkin 2 c. flour 2 tsp. baking powder 1 tsp. cinnamon or pumpkin pie spice Frosting: 1 (3 oz.) pkg. cream cheese 6 Tbsp. butter or margarine 1 Tbsp. vanilla 3 c. powdered sugar Mix in order given: sugar, vegetable oil, eggs, pumpkin, flour, baking powder and cinnamon or pumpkin pie spice. Bake in 12 x 18-inch jelly roll pan at 350 degrees for 20 to 25 minutes. After bars are cooled frost with frosting. These freeze well and are super moist. Makes large amounts so use a large pan.
