FRUIT COCKTAIL CAKE

Cake:

1 1/2 c. sugar
2 c. flour
2 tsp. soda
2 c. fruit cocktail (do not
drain)
1/4 tsp. salt
2 eggs, unbeaten

Icing:
3/4 c. sugar
1/2 c. canned milk
1 stick butter
1 tsp. vanilla
1 c. coconut

Cake: Mix all ingredients by hand. Sprinkle top of
unbaked cake with 1/2 cup brown sugar and 1/2 cup chopped nuts.
Bake in 350 degrees oven for 35 to 40 minutes.
Icing: Boil one minute and add 1 cup coconut; remove
from heat; add vanilla. Make icing as soon as cake comes from
oven and pour over hot cake. Lack of shortening in cake is
intended.
