FRESH APPLE SPICE CAKE

1 c. vegetable oil
2 c. sugar
3 eggs
3 c. all-purpose flour
1 tsp. soda
1/4 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. vanilla extract
1 c. chopped pecans
3 c. peeled, finely chopped
apples

Combine oil and sugar; beat well. Add eggs one at a
time, beating well after each. Combine flour, soda, salt,
cinnamon and nutmeg; stir well. Add dry ingredients to sugar
mixture, beating well. Add vanilla; mix well. Stir in pecans
and apples. Pour batter into a greased and floured 10-inch
Bundt pan. Bake at 350 degrees for 1 hour and 15 minutes or until
cake tests done.
Glaze top with powdered sugar glaze or just sprinkle
with powdered sugar.
