MOLASSES SPICE COOKIES
(Makes 2 Dozen Cookies)
1 1/4 c. whole wheat pastry
flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. powdered ginger
1/2 tsp. ground clove
6 Tbsp. butter Crisco,
softened
1 egg
2 Tbsp. molasses
1 Tbsp. vanilla extract
1/2 c. date sugar or brown
sugar
1/4 c. currants or chopped
pecans or walnuts

Sift the flour, baking soda, cinnamon and cloves togeth-
er in a large bowl. In a second large bowl, beat the butter
Crisco, egg, molasses, vanilla and date sugar together until
thoroughly blended. With floured hands, form the dough into
balls about 1-inch in diameter and arrange them 1-inch apart on
cookie sheets. Bake at 375 degrees for about 12 minutes or until
cookies are puffed and cracked on top. Cool on wire racks.
