DATE-NUT PINWHEEL COOKIES

2/3 c. dates
1 c. water
1 c. brown sugar
1/2 c. finely chopped pecans
pinch of salt
3 eggs
1 tsp. vanilla
1/2 c. sugar (granulated)
1 c. granulated sugar
1 c. Crisco
4 c. flour
1 tsp. soda

Cook dates, 1/2 cup sugar and water together until
thick. Add nuts and cool. Prepare cookie dough by creaming
together sugars, vanilla and shortening. Add eggs, one at a
time, beating after each egg. Add flour which has been sifted
with soda and salt. Roll out on waxed paper and spread with
the date mixture. Roll up and put in refrigerator or freezer
until firm, slice as needed. Place on greased cookie sheet and
bake 10 to 15 minutes at 375 degrees.
