BURNT SUGAR CAKE AND ICING 2/3 c. sugar 1/3 c. water (boiling) 1/2 c. butter 1 1/2 c. sugar 2 1/2 c. flour 1/2 tsp. salt 1 tsp. vanilla 3 eggs (separated) 1 c. water 2 tsp. baking powder Caramelize 2/3 cup sugar; add boiling water. Cook to syrup stage, cool (save 2 tablespoons for icing). Cream butter and 1 1/2 cups sugar; add beaten egg yolks. Sift 2 cups flour and salt; add alternately with water. Beat hard several minutes. Sift baking powder with remaining 1/2 cup flour. Fold in stiffly beaten egg whites, then the caramelized syrup. Bake in two layers in 350 degrees oven for 25 to 30 minutes. Icing: 1 1/2 c. sugar 3 Tbsp. butter 3/4 c. cream Make icing in pan sugar was caramelized in. Cook to very soft ball stage. Cool, add the 2 tablespoons syrup saved from the cake; beat. Spread on cake. If desired, nuts may be added to the icing.
