MANDARIN ORANGE CAKE

1 Duncan Hines yellow cake mix
1 c. oil
4 eggs
1 small can mandarin oranges
(liquid and all)

Mix oranges and juice in mixer until broken up, then mix
cake mix, oil, eggs and oranges. Beat on medium speed 3
minutes. Pour in 9 x 13-inch greased and floured pan. Bake at
350 degrees for 45 minutes.

Icing:
1 small can crushed pineapple
1 (8 oz.) cream cheese
1/2 c. powdered sugar
1/2 c. white sugar
1 small carton Cool Whip
Drain crushed pineapple. Punch some holes in top of
cake and drizzle with pineapple juice. Beat cream cheese,
powdered sugar and white sugar until fluffy, then add Cool Whip
and crushed pineapple. Spread on cake. I like to add 1 cup
coconut to the icing. You may use pecans also.
