FRUITY GRANOLA BARS

nonstick spray coating
1/2 c. whole wheat flour
1/2 c. quick cooking rolled
oats
1/2 tsp. baking soda
1/4 tsp. ground cinnamon
1/4 c. cooking oil
1/4 c. applesauce
3 Tbsp. honey
1/2 tsp. vanilla
3/4 c. (3 oz.) chopped, mixed
dried fruit
1/4 c. chopped walnuts

Spray a 10 x 6 x 2-inch baking dish with nonstick
coating. In a medium mixing bowl, stir together flour, oats,
baking soda and cinnamon. Combine oil, applesauce, honey and
vanilla. Stir applesauce mixture into flour mixture until
combined. Stir in dried fruit and nuts. Transfer to the
prepared baking dish; spread evenly. Bake in a 350 degrees oven for
15 to 20 minutes or until a wooden toothpick inserted near
center comes out clean. Cool in the dish on a wire rack. Cut
into bars. Store in a tightly covered container at room
temperature or in the freezer. Makes 16 bars (8 servings).
