CARROT CAKE WITH CREAM CHEESE ICING

Cake:

2 1/2 c. sifted flour
2 c. white sugar
1 1/2 tsp. soda
1 1/2 tsp. baking powder
1/4 tsp. salt
1 1/2 c. oil
4 eggs
3 c. grated carrots
1 1/2 c. chopped nuts

Icing:
1 (8 oz.) pkg. cream cheese
4 c. powdered sugar
1 Tbsp. lemon juice
1 tsp. grated lemon rind

Sift dry ingredients together. Add sugar to oil and
mix. Add eggs, one at a time, beating well. Add dry ingredi-
ents slowly. Mix in carrots and nuts. Bake in large pan at
300 degrees for 1 hour.
Icing: Soften cream cheese, mix until smooth, add
powdered sugar slowly, add lemon juice, beat until smooth. Ice
cake and sprinkle with chopped nuts.
