PEANUT BUTTER CUPCAKES

1/2 c. chunky peanut butter
1/3 c. shortening
1 1/2 c. brown sugar
1 tsp. vanilla
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 c. milk

Cream peanut butter and shortening. Add brown sugar;
beat until light. Add vanilla. Beat eggs in, one at a time
until fluffy. Sift flour, baking powder and salt together.
Add alternating with milk. Fill muffin cups 1/2 full. Bake at
375 degrees for 15 to 20 minutes. Cool. May be frosted with peanut
butter. Makes 2 dozen.
