BANANA NUT CAKE 1/2 c. margarine 1 1/2 c. sugar 2 eggs 3 bananas 2 c. flour 1 tsp. soda 1/2 tsp. salt 1 tsp. vanilla 1/2 c. pecans, chopped 4 Tbsp. buttermilk Icing: 1 c. pecans, chopped 1/4 c. margarine 1/2 c. powdered sugar 1 banana, mashed Cake: Cream in order given: margarine, sugar, eggs, bananas, flour, soda, salt, vanilla, pecans and buttermilk. Bake in 2 loaf pans or one 9 x 13-inch cake pan at 325 degrees for 45 minutes. Icing: Cream margarine and sugar. Add mashed banana and pecans. Spread on cool cake.
