HEARTY GRAHAM PANCAKES 1 c. graham or wheat flour 1/2 c. all-purpose flour 2 Tbsp. sugar 1 tsp. baking powder 3/4 tsp. baking soda 2 c. buttermilk or sour milk (1 qt. when doubled) 1 egg, beaten blueberries, apples, chopped blackberries, etc. Mix dry ingredients in medium size bowl. Mix remaining ingredients and add to dry ingredients; stir to moisten dry ingredients. (Add fruit here and mix in batter.) Pour onto hot lightly greased griddle, 1/4 cup at a time. Turn pancakes when tops are covered with bubbles and edges look cooked. Turn only once. Serve with melted butter and warm syrup.
