HARVEST CIDER 2 c. water 1/2 c. packed brown sugar 1 Tbsp. grated fresh orange peel 3 sticks cinnamon 2 tsp. whole cloves 1 tsp. whole allspice 1 tsp. coriander seed 1/4 tsp. ground nutmeg 2 qt. apple cider 1/2 c. fresh orange juice 3 Tbsp. lemon juice 1/2 c. rum or sherry (dry) Heat water, sugar, orange peel and spices in a 2 quart saucepan over medium heat to boiling; reduce heat. Simmer, covered 20 minutes. Pour through strainer lined with cheese- cloth (or coffee filter). Place liquid in Dutch oven or large crock-pot. Add cider, orange juice, lemon juice and rum or sherry; heat until hot. Good with soft pretzels and Cheddar cheese.
