CANNED APPLES FOR PIE FILLING

7 qt. apples, peeled, cored,
sliced
4 c. sugar
1 c. cornstarch
1 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
10 c. water
3 Tbsp. lemon juice

Put sugar, cornstarch, cinnamon, nutmeg, salt and water
into large kettle. Cook until bubbly. Remove from heat and
add lemon juice. Add apples. Put in jars and cold pack 20
minutes or 10 minutes at 5 pound pressure. Do not fill jars to
top.
