CREOLE EGGS GRINALDS

1 medium onion, chopped
2 Tbsp. bacon fat
salt
pepper
3 Tbsp. butter
3 Tbsp. flour
1 c. milk
1 large can tomatoes
2 Tbsp. Worcestershire
8 large hard-boiled eggs,
sliced
1 c. toasted bread crumbs

Brown onion in bacon fat. Add tomatoes, salt, pepper
and Worcestershire sauce. Simmer until onions are well done.
Make a white sauce of butter, flour and milk. Sauce should be
very thick. Add tomato mixture. In a buttered casserole,
layer eggs, sauce and bread crumbs. Bake at 400 degrees about 25
minutes.
