SPICE AND HERB SEASONING MIXTURE

1 c. peppercorns (all white or
1/2 white and half black)
4 tsp. ground ginger
4 tsp. freshly grated nutmeg
1 tsp. whole cloves
2 average size sticks whole
cinnamon, broken up
4 medium-large bay leaves,
crumbled
1 1/2 tsp. dried thyme leaves
1 tsp. blades whole mace,
crumbled before measuring
1/2 tsp. whole allspice

Combine all ingredients and grind them in an electric
spice mill, working in batches, if necessary, or use a blender.
Sift the mixture through a fine sieve and pack it tightly in a
jar or jars. Cork or cover the container(s) closely and store
away from heat and light.
