BOLOGNA BOWLS 8 slices bologna 3 eggs 2 Tbsp. milk dash of pepper 2 Tbsp. finely chopped onion 3/4 c. shredded Cheddar cheese In large skillet or microwave, cook 3 slices bologna until centers puff up. Transfer bologna slices to muffin cups and set aside. Chop remaining 5 bologna slices into small pieces. In small bowl, beat together eggs, milk and pepper; stir in chopped bologna and onion. Pour egg mixture evenly into the 3 bologna-lined cups. Bake in 375 degrees oven for 15 minutes or until eggs are set. Sprinkle with cheese. Bake an additional 1 to 2 minutes, or until cheese is melted. Loosen cups with knife and transfer to serving plates with spoon. Makes 3 servings.
