FRESH PEACH BUTTER 6 lb. peaches 1/4 c. lemon juice 2 tsp. cinnamon 5 c. sugar Wash peaches. Peel, quarter and pit. Place about 3 cups of peaches at a time in blender. Cover; blend until smooth. Repeat process. Measure 11 cups and place in crock- pot. Stir in lemon juice and cinnamon. Cook uncovered on high for 7 hours, stirring twice. Stir in 5 cups sugar. Cook uncovered 2 more hours, stirring several times. Pour into hot sterilized 1/2 pint jars, leaving 1/2-inch headspace. Wipe jar rims; adjust lids. Process in boiling water bath for 10 minutes (start timing when water returns to boiling).
