MINCEMEAT 3 lb. beef or pork 1 1/4 lb. suet 2 lb. brown sugar 1 c. molasses 4 Tbsp. salt 3 lemons 6 oranges (remove seeds) 1 1/2 qt. cider or fruit juice 3 lb. raisins 2 lb. currants 3/4 lb. citron 2 c. meat stock 1 tsp. each cloves, cinnamon, nutmeg and pepper 3 1/2 qt. chopped apples Grind all fruits and meat.
