HOMEMADE NOODLES 3 egg yolks 1 whole egg 3 Tbsp. cold water 1 tsp. salt Beat until very light the 3 egg yolks and 1 whole egg. Beat in cold water and salt. Stir in and work in with hands 2 cups flour. Divide dough into 3 parts. Roll out each piece as thin as possible on floured surface. When dough is partially dry, roll up as for jelly roll. With a thin sharp knife, cut into strips of desired width. Shake out strips and allow to dry before using or storing.
