COCOA
(4 Servings)
1 c. boiling water
1/4 c. cocoa
1/8 tsp. salt
2 to 4 Tbsp. sugar
1/2 tsp. cinnamon
1/16 tsp. cloves and/or nutmeg
3 c. scalded milk
1 tsp. vanilla

Combine, stir and boil for 2 minutes in the top of a
double boiler, over direct, but low heat: water, cocoa, salt
and sugar. Then add cinnamon, cloves and/or nutmeg. Place the
top of the boiler over the boiling water. Add scalded milk.
Stir and heat the cocoa. Cover and keep over hot water 10 more
minutes. Add 1 teaspoon vanilla. Beat with wire whisk before
serving.
