CHINESE FRIED RICE

1 c. cooked rice
1 1/2 c. clear broth or
chicken bouillon
1/4 c. butter
1 raw egg, slightly beaten
1 tsp. salt
1/4 tsp. fresh ground pepper
1 1/2 Tbsp. soy sauce or more,
to taste
1/4 c. chopped onion

Wash rice in cold water several times and drain. Add
broth to rice and bring to boil. Cover. Simmer slowly for 35
minutes. Let stand, covered, for 15 minutes.
Heat butter in skillet. Add egg. Scramble well,
breaking as it cooks. Add all other ingredients. Blend well
and cook 10 minutes longer on very small fire. Stir occasion-
ally.
