MONTE CRISTO SANDWICH

Sandwich:

2 Tbsp. soft butter or
margarine
1/2 tsp. prepared mustard
3 slices white bread
3 slices turkey, cut thin
3 slices baked ham, cut thin
shortening or oil for deep
frying

Batter:
1 egg white
1 egg
2 Tbsp. milk
dash of salt
dash of pepper
currant jelly

Sandwich: In small bowl blend butter with mustard.
Spread on bread, buttering one slice on both sides. Arrange
turkey on one slice of bread. Top with slice buttered on both
sides. Then with ham and third slice, buttered side down. Cut
sandwich in half diagonally and secure with wooden picks. Heat
shortening (about 2 inches deep) to 400 degrees on deep frying ther-
mometer. Meanwhile make batter.
Batter: In small bowl with rotary beater, beat egg
white until stiff peaks form. In medium bowl, beat remaining
batter ingredients. Gently fold in egg white. Dip sandwich
halves in batter coating thoroughly. Fry in hot fat until
golden, about 2 minutes. Serve with currant jelly. Yield: 1
sandwich.
