APPLE BUTTER

4 lb. apples
1 c. apple cider or juice
2 c. sugar
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ground cloves

Wash and core apples. Cut in eighths. Put 1/3 cup of
cider and 5 or 6 pieces of apple into blender container. Cover
and process at puree until smooth. Repeat until apples are
pureed. Add sugar and spices. Cook over low heat about 45
minutes. Stir occasionally. Pour at once into sterilized jars
and seal. Yields about 3 pints.
Variation: Plums may be used instead of apples.
