WATERMELON PRESERVES

1 watermelon rind
pickling lime (1 vial)
5 lb. sugar
lemon peel
1 qt. water

Cut watermelon rind. Remove all red and green. Use
white part. Cut into squares. Soak overnight in lime water.
Rinse 3 times. Mix rind, sugar, lemon rind and water. Cook
slowly until golden and thick. Put into jars and seal.
