TAFFY APPLES

12 ice cream sticks
12 medium-size apples
2 c. sugar
1 c. corn syrup
1/2 c. evaporated milk
1/2 c. water, lukewarm
1/8 tsp. soda
1/2 tsp. vanilla
1/4 tsp. salt

Wash and dry apples well, then chill for 30 minutes.
Mix the sugar and corn syrup in a medium saucepan. Boil
quickly until candy reaches firm ball stage when dropped in
cold water (about 244 degrees). Stir in the evaporated milk, water
and soda, very slowly so boiling doesn't stop. Cook rapidly,
stirring now and then until candy reaches firm ball stage.
Mixture burns easily, so watch carefully. Add vanilla and
salt, remove from heat and dip apples and place on buttered
cookie sheet and chill.
