STEAK AND MUSHROOM SANDWICH

1 lb. sirloin steak, 1 1/2
inches thick
salt and freshly ground pepper
2 Tbsp. butter or margarine
1/2 lb. mushrooms, sliced
1/2 tsp. thyme
1 long loaf French bread or 2
smaller loaves

Heat a lightly oiled cast-iron skillet over medium-high
heat. Add steak and cook 5 minutes per side for rare, 7
minutes for medium. Remove from skillet. Season lightly with
salt and pepper; let stand 10 minutes. Cut into thin slices.
Meanwhile, in same skillet, melt butter or margarine,
thyme, 1/2 teaspoon pepper and 1/4 teaspoon salt. Cook,
stirring, until mushrooms are tender. Cut bread into 4
(5-inch) pieces; split each piece in half. Divide mushrooms
and steak evenly among 4 bottom halves. Replace top halves.
Makes 4 sandwiches.
