FEATHER DUMPLINGS

2 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
4 tsp. sugar
1 Tbsp. shortening
1 c. milk

Sift flour once, measure and resift with the baking
powder, salt and sugar. Cut in shortening with a pastry
blender until the mixture resembles fine meal. Add the milk
and stir until the flour is all moistened. Drop by spoon onto
bubbling stew or broth, making sure it does not rest down in
liquid. Allow to cook gently for 10 minutes. Cover and reduce
heat even further and let simmer for 10 minutes longer. Do not
remove lid during this time. For fruit dumplings, use 4
tablespoons sugar in dough.
