GRANDMA'S MINCEMEAT 5 lb. neck meat or any good beef, cut up 4 lb. seedless raisins 6 lemons and 3 lemon peels 2 lb. sugar 1 Tbsp. pepper 3 lb. currants (if not available, use more raisins and apples) 4 lb. apples (tangy) 2 Tbsp. ginger 2 Tbsp. salt 1 lb. citron (optional) 1 qt. apple cider or juice 1 qt. white syrup 3 lb. suet (ground) 2 Tbsp. cinnamon 2 Tbsp. cloves 2 Tbsp. nutmeg Boil meat and grind. Add other ingredients. Cook until done. If too dry, add more juice, vinegar or meat juice. Season to taste; vinegar helps give it zip.
