FISH FRY BATTER FOR BONELESS FISH

1 c. flour (plain)
2 tsp. baking powder
1 tsp. salt
1 egg, separated
1/2 c. lukewarm water
1 Tbsp. melted fat

Cut fish into small pieces (about 1-inch square). Sift
flour, baking powder and salt in a mixing bowl. Drop egg yolk
in center. Add water and fat; mix well. Beat egg white until
it starts to get stiff. Fold in beaten egg white. Dry fish
pieces on paper towel and dip into batter. Cook in heated
shortening at 365 degrees until golden brown; drain well. Also good
for shrimp or chicken.
