DRIED BEEF (OLD RECIPE)

20 lb. beef
1 pt. salt
1 tsp. saltpetre
1/4 lb. brown sugar

Mix all ingredients well. Divide into 3 equal parts and
rub well into beef for 3 successive days. Then hang up to dry.
When dry, put into a flour bag and keep in a dry place. Chunks
of about 10 pounds each are best, smaller one will do but
mustn't let them get too dry. There must be no bones. Just
clean meat.
