CANDIED ORANGE PEEL (OLD RECIPE)

1/4 c. clear corn syrup
1/2 c. sugar
1/4 c. water
3 oranges, thick skinned
dash of salt

Cut peel from oranges in lengthwise strips. Put in
saucepan, cover with water and bring to a boil. Cook until
soft (about 5 minutes). Drain, cool and cut away white pulp
with sharp knife. Then cut in narrower strips. Combine corn
syrup, salt, sugar and water in saucepan. Cook over low heat,
stirring until sugar is dissolved. Add orange peel and contin-
uing cooking until syrup forms a soft when a small amount is
dropped in cold water. Remove strips from syrup, draining as
much as possible and place on wax paper. When strips are cool,
roll in sugar.
