FINNISH OVEN PANCAKE 4 eggs 4 c. milk 2 c. flour 1 tsp. sugar 1/4 tsp. salt 4 Tbsp. butter Mix eggs, flour, sugar, milk and 2 tablespoons butter in a large bowl. Melt the remaining butter to grease a large cake pan, something near 10 x 20 x 1-inch. Pour the batter into the well buttered pan. Bake at 450 degrees for about 15 minutes or until pancake is crisp and brown. Serve hot with jam or syrup, cold as a cake, or hot or cold with any topping you can dream up, including ice cream.
