BATTER 1 1/3 c. sifted flour 1 tsp. salt 1 Tbsp. melted butter 2 eggs, separated 3/4 c. stale beer Combine flour, salt, melted butter, egg yolks and stale beer. Beat only until smooth. Cover and let stand in cool place 2 to 12 hours. Just before using, beat egg whites until stiff and fold gently into batter. Good with chicken, around 2 1/2 pounds, and shrimp.
