CHICKEN BREAST PARMESAN

1 (8 oz.) can tomato sauce
2 cloves garlic, minced
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. salt
1/2 c. corn flakes, crushed
1/3 c. grated Parmesan cheese
2 tsp. sesame seed
1 tsp. parsley flakes
6 chicken breasts, split and
skin removed
1 egg, beaten
1 tsp. water
2/3 c. Mozzarella cheese

In a shallow bowl beat egg and water. Set aside.
Combine tomato sauce, garlic, basil, oregano and salt in a
2-cup measuring cup. Cover with plastic wrap and microwave on
High for 1 1/2 to 2 1/2 minutes. Stir and microwave 3 to 5
minutes at 50% power. Remove and set aside. Mix cornflake
crumbs, Parmesan cheese, sesame seed and parsley flakes. Dip
chicken in egg mixture and then in crumbs. Place in 12 x
8-inch glass baking dish. Cook on High 5 to 8 minutes.
Continue to microwave at 70% power for 10 to 13 minutes or
until chicken is done. Pour tomato sauce over chicken.
Sprinkle Mozzarella cheese over chicken. Cook on 70% power for
2 to 4 minutes or until cheese melts.
