NEW ENGLAND BOILED DINNER (Serves 6 to 8) 2 1/2 to 3 lb. corned beef round or brisket with seasoning packet 3 medium carrots, peeled and cut into thin strips 1 1/2 c. water 2 large unpeeled potatoes, cut into eighths 1 medium head cabbage, cut into sixths Place corned beef contents of seasoning packet, water and carrots in 3-quart casserole. Cover tightly. Microwave on High 7 to 9 minutes until water boils. Reduce power to 50% or Medium. Microwave 30 minutes. Turn meat over. Add potatoes and top with cabbage. Recover and microwave 35 to 45 minutes or until vegetables are tender, rotating dish 1/2 turn after one half the cooking time. Let stand covered 10 minutes. To serve, carve corned beef diagonally across the grain in thin slices. To microwave at 30% (Low) increase cooking time 40 minutes and 40 to 80 minutes.
