MICROWAVE TURKEY FLORENTINE

2 (10 oz.) pkg. frozen chopped
spinach, thawed and pressed
dry
2 to 3 c. cut up or thinly
sliced turkey
1/2 tsp. salt
1/2 tsp. pepper
1 (10 3/4 oz.) can condensed
cream of mushroom soup
3 Tbsp. milk
2 Tbsp. dry sherry

Place spinach in a 2 1/2 quart glass casserole, covering
the bottom of the dish evenly. Top with turkey and season with
salt and pepper. Blend remaining ingredients until smooth in a
small bowl. Pour mixture over turkey. Smooth with spatula if
necessary. Cover; microwave at power level for 10 to 13
minutes or until heated through. Let stand, covered, 5 minutes
before serving. Makes 4 servings.
