CORN PUDDING

1 egg
1/2 c. milk
2 Tbsp. finely chopped onion
3/4 c. Cheddar cheese cracker
crumbs
2 Tbsp. butter or margarine
paprika
1 (16 oz.) can cream-style
corn
1/4 c. chopped green pepper
1/2 c. sugar

Beat egg in 1 1/2 quart casserole. Stir in corn, milk,
green pepper, onion, sugar and 1/2 cup cracker crumbs. Dot
with butter and sprinkle with remaining cracker crumbs and
paprika.
Microwave on Medium-high (70%) for 15 to 20 minutes or
until a knife inserted near edge comes out clean. Allow to
stand 15 minutes or until center is set. Recipe yields 4
servings.
