COCONUT CRUSTLESS PIE

3 eggs
1/3 c. biscuit mix
1/3 c. sugar
1/2 tsp. nutmeg
3/4 c. flaked coconut
1 1/2 c. milk
1 tsp. vanilla
3 Tbsp. soft butter

In mixing bowl or blender combine all ingredients well.
Pour into 9-inch glass pie dish. Microwave (High) 7 to 9
minutes, rotating 1/4 turn halfway through cooking. Sprinkle
top with nutmeg and toasted coconut. Serves 6 to 8.
Maxi-Time: Medium-high (70%) 10 to 12 minutes. Rotate
1/4 turn if pie looks like it's going over in dish.
Center "Jiggles like Jell-O" when done.
Magic: Toast Coconut. In pie pan spread 2 to 3 cups
coconut evenly on bottom. Microwave (High) 2 to 3 minutes,
stirring every 30 seconds. Less coconut takes less time and
more time for more.
