SPINACH RING WITH CHEESE 2 (10 oz.) pkg. frozen spinach 1 c. cottage cheese 1/2 c. shredded Swiss cheese 1/4 c. grated Parmesan cheese 2 eggs 1/2 tsp. ground thyme 1/2 tsp. salt 1/4 tsp. pepper 1/4 c. cracker crumbs Combine all ingredients, except crumbs in a 2 quart mixing bowl. Blend thoroughly. Pour mixture into a buttered microwave-safe 6 cup ring mold. Cover with wax paper. Micro- wave at power level 7 for 11 1/2 to 13 1/2 minutes or until mold is set. Let stand, covered 5 minutes. Sprinkle with crumbs and fill with scrambled eggs or a creamed food.
