1/4 c. diced green pepper
1 Tbsp. dried minced onion
1 (8 oz.) can tomato sauce,
divided use
1 lb. ground beef
1 large egg, slightly beaten
1/2 c. Italian seasoned dry
bread crumbs
1 tsp. Italian seasoning
1 tsp. seasoned salt
1/4 tsp. garlic powder
1/4 tsp. seasoned pepper
2 Tbsp. shredded Mozzarella
3 pimiento, stuffed green
olives, sliced

Place green pepper and onion in a 2 quart glass bowl.
Microwave on High 1 1/2 minutes. Reserve 1/4 cup tomato sauce
and add remaining sauce to onion mixture. Add ground beef,
egg, bread crumbs, Italian seasoning, seasoned salt, garlic
powder and seasoned pepper. Mix well. Shape into loaf. Place
on a microwavesafe meat or bacon rack. Cover with wax paper.
Microwave on High for 10 minutes, rotating the rack half way
through. Pour remaining tomato sauce over loaf. Sprinkle on
cheese and decorate with olives. Place back in microwave. Do
not cover. Microwave on High for 2 more minutes. Let stand 10
minutes before slicing. Makes 4 to 5 servings.
