MICROWAVE SOUFFLE 8 slices bacon, cooked 8 slices wheat or white bread, crusts removed 1 c. grated Cheddar cheese 1 c. grated Monterey Jack cheese 1/4 c. chopped green onion 5 eggs 1 1/4 c. half and half cream 1/2 tsp. seasoned salt 1/2 tsp. seasoned pepper chopped parsley as garnish Cook bacon and crumble. Set aside. Slice bread into small cubes. Place half of bread cubes in bottom of 2 quart oval dish, layer with 1/2 cup Cheddar cheese and 1/2 cup Jack cheese and half of the chopped onions. Add another layer of bread cubes, cheeses and onions. Set aside. In a bowl, blend eggs, half and half and seasonings. Blend until well mixed, then pour mixture over the bread and cheese layers. Chill in refrigerator overnight. To Cook: Microwave on Low power for 15 minutes, then increase power to High and cook for an additional 25 minutes. When done add crumbled bacon and parsley as garnish. Serve immediately.
