LOUISIANA TABASCO JELLY FOR MICROWAVE

1 c. water
2 Tbsp. Tabasco sauce
1/3 c. lemon juice
3 c. sugar
1 pkg. liquid fruit pectin
3 drops red food coloring

In a 2 quart bowl, combine water, Tabasco sauce, lemon
juice and sugar. Microwave on High for 8 to 10 minutes or
until boiling. Add fruit pectin and red food coloring. Stir
well. Microwave on High for 3 to 4 minutes or until mixture
comes to a full rolling boil. Microwave on High for 30 seconds
to allow mixture to boil for a full 30 seconds. Pour into hot
jars and seal. Serve over cream cheese as a dip for Ritz
crackers. Makes 4 half pint jelly jars.
