POTATO LASAGNA

1 lb. ground beef
1/2 c. chopped onion
1 clove garlic, minced
1 tsp. salt
1/2 tsp. pepper
1 (8 oz.) can tomato sauce
1 c. water
2 Tbsp. chopped parsley
1/2 tsp. crushed leaf oregano
4 large potatoes, peeled and
sliced crosswise thinly
grated Parmesan cheese

In a 2 quart microsafe baking dish, combine ground beef,
onion, garlic, salt and pepper. Microwave on High 4 to 6
minutes or until beef is no longer pink, stirring every 1 1/2
minutes and breaking up beef; drain fat. Stir in tomato sauce,
water, parsley and oregano. Microwave on High 3 to 4 minutes
or until hot. In the bottom of a 12-inch oval or 12 x 9-inch
rectangular microsafe baking dish, arrange half of potatoes.
Spoon half of meat mixture over potatoes; cover with remaining
potatoes and meat. Cover with plastic wrap. Microwave on High
20 to 25 minutes or until potatoes are tender, rotating the
baking dish every 5 minutes. Sprinkle on Parmesan cheese.
Cover tightly with aluminum foil. Let stand 10 minutes before
serving. Serves 4.
